This year, 2021, has marked the 50th anniversary of the Cap Classique in South Africa. The first bottle of SA bubbly made in the traditional method of Champagne was from the 1971 vintage. A surprising fact about this wine is it was 100% Chenin Blanc, which was a prolific cultivar during that time. Over the decades the market has seen many changes and now this category of bubbly wine has become one of the fastest-growing in SA.
Ken Forrester Wine brings together the superb reputation for Chenin Blanc and the history of SA bubbly in the form of Sparklehorse, a 100% Chenin Blanc Cap Classique. The grapes are grown in cool vineyards, planted in 1975, where the critical acidity is maintained as the grapes slowly ripen. The fruit is carefully monitored to identify the perfect time to hand harvest and ensure quality. The grapes are hand-sorted before crushing to release the precious juice that is vinified in the traditional method. The wine is left on the lees to develop a creaminess and delicate mousse while still maintaining bright, fresh apple, pear, and quince aromas.
