Red grapes are crushed and fermented with their skins, extracting colour, tannins, and structure, which contribute to the complexity of the wine.

Fermentation is where the transformation truly begins. Yeast converts the sugars in the grape juice into alcohol, releasing carbon dioxide and heat. Reds like Gypsy benefit from extended barrel aging to achieve balanced flavours and softened tannins.
